Peggy Noe Stevens – 7.9 

Nose: Corn husk and hay. Honeyed granola and light spiced trio of peppercorn, white pepper and cinnamon.  Creamy banana pudding as well.

Palate: Smoked marshmallow and wood tannins. Apple and dried candied dates. Earthy leather and calming black tea.

Finish: Airy and quick to escape. Takes it easy on the tongue and has a pleasing oak finish.

Comment: Great batch cocktail and would make a Manhattan with only a dash of bitters.

Susan Reigler – 8.3 

Nose: Herbal, with notes of corn kernels freshly cut from the cob. Elements of citrus and some traces of vanilla and cinnamon. 

Palate: Very grain forward with a definite lemon note becoming more prominent, along with vanilla, cinnamon, and some new leather. Reminiscent of lemon cream cookies with a little cinnamon.

Finish: Dries to light oak, with a bit of vanilla and citrus persisting on. 

Comment: Try this with an ice cube or a little water to open it up.
