Peggy Noe Stevens 8.4

Nose: Classic vanilla and grain. Apricots and anise. A touch of leather and oak that eventually unfolds with a few drops of water to a smokey note and candied dates.

Palate: Artfully balanced with spiced pecans and sweet milk chocolate. Black currants and ample overlay of barrel toast.

Finish: A somewhat short finish, but no less inviting and pleasing with earthy notes.

Comments: Would be an incredible food pairing  due to the flavor complexity.

Nose: Baked fruit and brown sugar with vanilla cream and sweet caramel. Light notes of cinnamon and allspice.

Palate: High proof mutes some of the aromatics. Add water and it blooms with apples, cherries, cinnamon and caramel.

Finish: Persistent finish, from sweet to spicy to oaky dry. The pepper dances around for a considerable time.

Comments: Should be enjoyed with an ice cube or a little water to unlock all the layers of flavor to be found here.
