Peggy Noe Stevens 7.3

Nose: Honey and Crème Brûlée. Background hints of wood. Coffee bean and cardamom with earthy truffle.

Palate: Light brown sugar and honey abound, then spiced pecan and tobacco. The  thrust of baking spice sits back and waits for a cool mint to reveal itself.

Finish: Approachable with a high ginger note and delicate toast note at the end.

Comments: Very approachable, but let it open a bit before taking a sip.

Susan Reigler 7.9 

Nose: Peaches, apricots, cinnamon, allspice and some sweet new leather.

Palate: Vanilla complimented by fruit and spice. Impressively smooth sipped neat. Just enough oak to give it backbone. It is very well balanced.

Finish: Begins with the fruit and dries quickly to light pepper and oak. Least complex aspect of this whiskey.

Comments: Stay balanced with the addition of water. Wish the finish had lived up to the rest of the nose and palate, though.
