Nose: Light brown sugar and caramel. Cinnamon bounces between honey granola and oak. Then mascarpone and mint.

Palate: Rich tannins of oak and replay of the brown sugar with warm baking spices. Delicate marshmallow that lingers with smoke.

Finish: Quickly finishes in subtle oak and a warm honey with some earthy leather.

Comments: A Bourbon that won’t take over a cocktail for 100 proof.

Nose: The nose takes a few minutes to reveal itself. Then light caramel and subtle notes of anise and dark berries emerge.

Palate: Caramel and new leather with honey and brown sugar. Fruit, seeming to alternate between apples and figs, hovers in the background. Cinnamon appears mid-palate.

Finish: The finish has staying power. Pepper and spice dominate.

Comments: Very smooth for a 100-proof whiskey. Water brings out more brown sugar, but changes it very little.
