Peggy Noe Stevens

Nose: Incredibly light and airy with the aroma.  Soft autumn leaves and tarragon herbs. Apricot and pear. Slight dill.

Palate: The sip wakes the palate with a streak of smoke that was hidden in the aroma. The herbs brighten even more and honey vanilla rises at the end of the sip.

Finish: Subtle and sweet, dry and easy on the astringency. Has some staying power.

Comment: Put it in the punch gang, it will sing.

Susan Reigler

Nose: Unassuming. Ripe apples and sweet corn, but both are very light. In time there is a tiny note of cinnamon, more ticklish than spicy.

Palate: Vanilla with a dusting of cinnamon up front with the ripe apples not far behind. Corn becomes buttered popcorn. Very smooth.

Finish: The persistent vanilla takes its time until it is replaced by some mildly peppered oak. Long for the proof.

Comment: Impressively rich mouthfeel. Use this to introduce a friend to  the joys of Bourbon.
