Nose: True vanilla cream. Herbaceous with sage and slight mint. Golden raisin, citrus and fresh white pepper.

Palate: Definite smoked char reveals then the white pepper comes in. Earthy leather with vanilla and maple syrup.

Finish: Flavors flow to a warm, creamy vanilla and golden raisin with touches of oak char.

Comments: Earthy goodness with the smoked char and herbaceous notes, but oh that creamy vanilla steals the show.

Susan Reigler

Nose: Apple orchard in both spring and fall, with flower and fruit mingling. Vanilla cupcake with icing and ground cinnamon.

Palate: The apples remain, and the vanilla is joined by brown sugar. Cinnamon receives a spicy backup from some white pepper.

Finish: Sweet and fruity with a tart edge of citrus. This fades to a dry ending with pepper. 

Comments: A bit hot for the proof, but the complexity allows some forgiveness. Drops of water cool it.
