Nose: Notably fresh grain and light sage with apple and grass. Chopped walnuts and tea, with honey drizzle.

Palate: Soft oak with full mouthfeel of sweetness from the honey. Mild white pepper with simple syrup and nutmeg.

Finish: Easy going and delicate, pleasant sweetness again and stylized oak accents; the apple notes come at the end.

Comments: Delightfully fresh and easy, just perfect for a highball or light refreshment.

Nose: A big sweet and spicy nose with a bouquet of freshly cut flowers and some rye grass. Brown sugar and light caramel.

Palate: Goldilocks. Not too sweet. Not too spicy. Just right. But the bold nose has become greatly subdued. Pleasant warmth, without heat.

Finish: Goldilocks again. Right down the middle in length. Clean and fades quickly.

Comments: Pale color and shy flavors suggest youth. Devotees may find it a little lacking. Safe bet for a cocktail.
