Peggy Noe Stevens

Nose: Grassy with honey notes and citrus. A veil of floral accents with white pepper. Buttery. Sugar cookie and vanilla. Celery.

Palate: Honey and herbaceousness drive the flavors. The spice is delicate and lies in the centre tongue which gradually unfolds some of the citrus notes. 

Finish: Short on the finish of sweetness but the earthy and herbal flavors linger a bit.

Comments: Light on the flavors, so an easy drinker. Pass the ice.

Susan Reigler

Nose: Cherries, both sour and sweet, with light brown sugar and vanilla custard.

Palate: Medium rich mouthfeel. Herbal element shows up here with light oak tannins and brown sugar. The fruit seems to have left. 

Finish: Surprisingly for this proof, the whiskey ends solidly in the middle of the chest. 

Comments: Would mingle very well with sweet vermouth in a Manhattan and would certainly tolerate the simple syrup in an Old Fashioned cocktail.
