Peggy Noe Stevens

Nose: Light brown sugar and soft caramel. Some cereal grain and yeasty bread. Smoked peppercorn and herbaceous frame.

Palate: Warm smokey caramel, peppercorn, licorice and warm brioche. Dates and raisin, oak and smoke.

Finish: A spike in the heat from the proof level, but mature for the proof and handles itself nicely.

Comments: This is a book Bourbon when you curl up and have a night to enjoy slowly.

Nose: Baked apples with custard sauce. Herbal drying hay, then fruit with green pepper and sweet oak.

Palate: Caramel, fruit, and nut candy bar. The sweetness is perfectly balanced with light pepper and oak. It wears its high proof lightly, too.       

Finish: Coats the tongue with a rich mouthfeel, and so lasts a very long time without wearing out its welcome.

Comments: Complex and elegant. A few drops of water amplifies the fruit. Beautiful for serious sipping.
