Peggy Noe Stevens

Nose: Fresh pear and butterscotch. Milk chocolate and brilliant nuttiness of roasted peanuts. Bread crust, herbal cascade of sage, and finally oak.

Palate: Blast of cornmeal and buttered popcorn. Slight mint with dense oak and tobacco. Marshmallow and golden-brown sugar. Black pepper.

Finish: Drying leather and black pepper with some warm caramel.

Comments: The finish has some oak muscle and grains galore.

Susan Reigler

Nose: Rising rye bread dough, vanilla, caramel, raisins, and a pinch of allspice. Very gentle nose – impressive given the proof.

Palate: Rich mouthfeel delivering umami and fruit notes. Grilled pork tenderloin sauced with mango and ginger chutney and rounded out with some peppery, almost smoky, oak.

Finish: Rye herbs surface, beginning with faint dill and rolling to oak and black pepper.

Comments: Very well balanced. Treat this whiskey with respect.
