Barrel Proof A121
Heaven Hill Distillers
Peggy Noe Stevens
Nose: Distinct spice character with creamy corn pudding. Bready yeast notes and caramel with faint vanilla and butterscotch too.
Palate: Honeyed fruit and granola. Caramel is velvety and decadent. Soft oak with a full mouthfeel. Subtle earthy leather notes.
Finish: It flows through to a warm, creamy caramel and corn finish with some spice heat that is airy and pleasing.
Comments: Like riding in a new Mercedes – love the smooth caramel ride and rich leather.
Nose: Chocolate-dusted oak, followed by underripe peach and mellow caramel. In time, brown sugar and vanilla cream arrive.
Palate: Chewy mouthfeel. Tongue-coating caramel with chocolate, peach, and dashes of baking spice. Beautifully balanced.
Finish: Peach, vanilla and caramel hand off to baking spices before drying into fresh oak. Comfortingly warm.
Comments: With water, the fruit, vanilla, and baking spices morph into peach cobbler.
