Peggy Noe Stevens

Nose: Wash of white pepper and oak. Bright apricot and banana with graham crackers and some walnuts.

Palate: Firm structure of oak and orange marmalade. The fruit appears again, but not with a ton of tannins or sweetness actually.

Finish: It seems a bit shy and light. Some vanilla and simple syrup. Cool and soft.

Comments: Prop this one up a bit in a cocktail.

Susan Reigler

Nose: A ripening orchard on a warm day, balanced by brown sugar and vanilla.

Palate: Peaches and ripe apples with light caramel sauce. Allspice brings a little spikiness, but perhaps too soon. The flavors are almost covered with the base of dry oak.

Finish: Medium long with a dusting of white pepper on the oak which dries progressively. The ending is warm, not hot.

Comments: A little bit of water amplifies the fruit and greatly improves the balance.
