Barrel Proof A121
Heaven Hill Distillers
Peggy Noe Stevens
Nose: Simple syrup and woodland frame. Coffee and golden-brown sugar. Slight raisin and yellow pepper. Butterscotch and toffee bits.
Palate: Inviting brown sugar and caramel with warm pepper. Walnut and buttered almond with a mixed bag of grains and cereal tones. Oak punches at the end.
Finish: Oak and simple syrup intertwine with some peppery highlights.
Comments: With the distinct oaky edge, allow some ice to dance in the glass – just don’t wait too long to sip.
Nose: Freshly peeled apple with caramel, brown sugar, and faint whiffs of cinnamon and allspice. Fine sweet oak serves as scaffolding.
Palate: Baked pears in vanilla sauce drizzled with caramel. Just the right amount of baking spice makes the fruit notes jump up.
Finish: Dries surprisingly quickly, given the substantial mouthfeel, to a mildly peppery oak. Warmth lingers, without heat.
Comments: Sip neat and enjoy as an after-dinner pleasure.
