Peggy Noe Stevens

Nose: Bright dark cherry and cassis that roll into baked apple, baking spices and anise. Medium length of caramel and vanilla.

Palate: Cinnamon candy slides to caramel and vanilla. Oak wraps the tongue and elevates the spice again leading back to some peachy twists and grains.

Finish: Lingers with spice and distinct oak presence that warms subtly as it fades.

Comments: A sweeter cocktail would take the spice notes and round out a nice sip.

Susan Reigler

Nose: Just-picked green apple dipped in honey, then given a thin coating of caramel. Peppery oak vies with cinnamon.

Palate: Dry and oaky. The fruit, caramel, and spice from the nose have all retreated to the edges of the tongue rather than being front and center.

Finish: Nutty oak at the start which rolls into peppery oak at the end.

Comments: Would have been nice if the balanced elements on the nose had carried over more convincingly onto the palate. But oak lovers will be pleased.
