Nose
Baked corn bread, a honeycomb glaze, and deep sage. Graham cracker and chopped walnuts. Savory, then fruit cocktail and bitter orange.

Palate
Chewy caramel and vanilla wafer. A layer of orange marmalade denotes some citrus. Herbal with white pepper and ginger. Cereal tones.

Finish
Finessed yet sturdy on oak tannin and sweet caramel with streaks of vanilla bean. Lingers in a soft but delightful ginger note.

Comments
Make a bitter orange Old Fashioned with this delight.

Nose
Corn on the cob, some vanilla, and peaches or apricots. But altogether light and hesitant to emerge.

Palate
Sweeter on the palate than the nose, with a solid chewy caramel flavor note, a pinch of cinnamon, and some tobacco leaf, along with oak.

Finish
The beginning is dominated by the caramel, which yields quickly to oak and light pepper.

Comments
Could use a little more fruit in the overall profile for balance. But it’s the style that would work well in a cocktail with sweeter ingredients.
