Restoration Rye marks first for Castle & Key

Castle & Key Distillery has released its first whiskey expression, Restoration Rye. The name pays homage to the restoration of the historic property that is home to the distillery.

Restoration Rye marks the inaugural whiskey release from Castle & Key since it was founded in 2014. The historic property was originally built more than a century ago and at one point was the iconic Old Taylor Distillery.

The aptly named expression is joined by Castle & Key’s new Roots of Ruin gin and Sacred Spring vodka release. The trio of spirits have all received a new look from the award-winning design team at Stranger & Stranger.

Each of the new releases are available for purchase in Kentucky, Indiana, Tennessee, South Carolina, Texas and Georgia now.

“We are more than excited to release our Restoration Rye, a spirit that is thoughtful in every detail. From grain to glass, and is a true representation of the team’s hard work and attention to detail over the past five years,” says Jon Brown, quality manager at Castle & Key Distillery. 


Creating the whiskey
Restoration Rye is a creation that was five years in the making and speaks to the careful restoration of the property. With that in mind, the whiskey was released in two batches. The brand has set its sights on creating spirits with consistency of high quality, rather than consistency in flavour. Therefore, no Castle & Key release will ever taste exactly the same.

The 2020 Restoration Rye release features two batches, both with unique flavor profiles. Batch #1 is created from a blend of 60 barrels, and Batch #2 is comprised of 57 barrels. During the blending process, barrels are grouped into pods with specific sensory profiles. Those pods are then blended together to achieve the unique, high quality flavor profiles. 

Batch #1 of Restoration Rye produced 78,000 bottles at an ABV of 51.5%, and Batch #2 produced 75,000 bottles at an ABV of 49.5%. Both bottles are available at $39.99.
