Nose

Light brown sugar and soft caramel. Some cereal grain and yeasty bread. Smoked peppercorn and herbaceous frame.

Palate

Warm smokey caramel, peppercorn, licorice and warm brioche. Dates and raisin, oak and smoke.

Finish

A spike in the heat from the proof level, but mature for the proof and handles itself nicely.
