Peggy Noe Stevens 8.3

Nose: Earthy and sweet corn pudding. Some mascarpone and simple syrup. Marshmallow and white pepper. Bosc pear and green tea with white chocolate.

Palate: Corn bread and bites of cayenne. Vegetal and herbaceous. Light brown sugar and maple syrup. Crushed almonds and leather accents.

Finish: Pleasant and bright corn finish with extended white pepper.

Comments: A nice corn whiskey to sip and savor. The white chocolate aroma is unique and very interesting.

Susan Reigler 8.0 

Nose: Corn flakes. Some sweetness supported by cornmeal and white sugar. These merge into a balanced nose.

Palate: A ripe apple note plays in the background, but the major component is sweet corn.

Finish: The least complex of the stages in the tasting. Dries to some light oak tannins.

Comments: Basically very simple, but a drop or two of water will bring out a bit of cinnamon not found when tasted neat.
